Vegan Brownie

VEGAN BROWNIES by Anne
This one was a hit on our Zürich Farewell Day apéro so here's Anne recipe for a full chocolate indulgence.
I love my grandma's original brownie recipe - but whenever I run events at Bubble Yoga, I try to offer inclusive food options so that everyone can find something they like & that matches their diet preferences. So this was my first attempt at vegan brownies, & given the enthusiastic response from everyone, I think it won't be the last 🙂 I tweaked a recipe I found online, so here goes my version of it - let me know how it goes!
Ingredients:
- 35g ground flaxseeds
- 130ml water
- 125g vegan butter
- 250g sugar (I use a mix of brown sugar & coconut sugar)
- 140g flour
- 80g cocoa powder
- 150g chocolate chips or roughly chopped chocolate (optional, I like the crunchy side of it)
- 10cl vegan liquid cream
- 1 tsp of salt
- 1 tsp baking powder
Directions:
- Place the flaxseeds in a bowl with water, stir a bit then let it sit for a while to thicken
- Melt the butter
- In a large bowl, mix the melted butter with the sugars
- Add the 'flax eggs' & mix well
- Add the flour, cocoa powder, salt & baking powder and stir (no need to over mix)
- Add some cream to smoothen the whole thing
- Add half of the chocolate chips & stir
- Prepare the oven dish with baking paper
- Pour the batter into the dish, smooth out the top with a spoon & add the rest of the chocolate chips on top
- Bake for 35-40min at 175°C
- Take them out of the over & leave to rest in the dish for about 15min (the brownies will firm up as they cool)
Slice, serve & enjoy!
