WINTER SMOOTHIE by Gosia

This Blueberry Beetroot smoothie will keep you satisfied and nourished on cold winter days!

One of my favourite winter‘s sweet treats are beetroots.
This beautiful vegetable is loaded with nutrients and full of flavour. I enjoy incorporating it into my diet in the cooler months and I recently discovered my new favourite way to enjoy the flavour and all the benefits of this incredibly healthy vegetable.

Smoothies are nutritious, quick and easy to put together and include everything that you need for a healthy and fulfilling meal. This recipe combines berries, diced beets, a banana and almond butter, and is packed with fiber, antioxidants, minerals and essential fatty acids.

What I love the most about this smoothie though is the vibrant, pink magenta colour that comes from the beetroot. The pigment that gives beets their colour is a phytonutrient that acts as a detoxifier and cleanses unwanted toxins from your body. It’s a real power food!

Bright berry flavours perfectly complement the subtle sweetness of the beet, almond butter adds the richness and the frozen banana thickens it all up.
Who could resist this creamy, gorgeous glass of goodness?

What’s your favourite way to use beetroot?

Ingredients:
This makes one hearty portion or two small portions

- 1 cup almond milk or any non-dairy milk of your choice
- 1⁄2 cup frozen mixed berries
- 1 frozen banana
- 1⁄3 cup of diced raw beetroot
- 1 tblsp toasted almond butter
- Honey or maple syrup to taste
Optional toppings: coconut shavings, fresh berries, dried goji berries, chia seeds

 

Directions:
Put all the ingredients into a high-powered blender and blend until smooth. If it’s too thick add more almond milk or water.
Top with the garnish of your choice.
